移动式聚餐餐饮服务管理规范
1 范围
本文件规定了移动式聚餐餐饮服务的术语和定义、分类、场所与布局、设施与设备、原料采购、运
输、验收、贮存与配送、餐具、用具清洗消毒、聚餐过程管理、人员要求、食品安全管理、宴席结束的
要求。
本文件适用于移动式餐饮服务企业提供的聚餐服务活动。

3 术语和定义
下列术语和定义适用于本文件。
3.1
移动式聚餐餐饮服务
为非固定就餐场所聚餐提供的餐饮服务。
3.2
聚餐
每场次就餐人数在 100人以上(含 100人)的餐饮活动。
3.3
移动式聚餐餐饮服务企业
移动式聚餐餐饮服务的提供者。
3.4
流动厨师
为移动式聚餐提供餐饮服务的厨师。
3.5
流动帮厨
在移动式聚餐餐饮服务中为厨师加工制作食物提供辅助服务的人员,如切配员。

移动餐车
由移动式聚餐餐饮服务企业配备的为移动式聚餐餐饮服务提供烹饪用的车辆,包括冷藏室、烹饪设
施、上下水系统、废水和废弃物收集设施等。
4 分类
根据聚餐人数将移动式聚餐餐饮服务分为三类:
4.1 中型移动式聚餐餐饮服务
为每餐次聚餐人数为 100人~200人提供的移动式聚餐餐饮服务。
4.2 大型移动式聚餐餐饮服务
为每餐次聚餐人数为 201人~500人提供的移动式聚餐餐饮服务。
4.3 特大型移动式聚餐餐饮服 务
为每餐次聚餐人数为 500人以上提供的移动式聚餐餐饮服务。
5 场所与布局
5.1 应符合GB 31654 —2021中3.1、3.2的要求。
5.2 移动式聚餐餐饮服务食物加工操作区域不宜正对卫生间出入口,应远离垃圾堆、露天粪坑、禽畜
